The sweet tooth immediately adjusted her eating habits but struggled to find a healthy alternative to the cakes and desserts she craved.

So she decided to go it alone, spending hours in the kitchen to master the art of crafting healthy desserts.

“I came across an article from Dr Terry Wahls who had MS but changed her diet and saw major improvements in her health,” the 24-year old said.

“So when I got sick I was forced to change my lifestyle completely - I started eating gluten free, dairy free and sugar free but I couldn’t ever find anything I liked so I started making things myself. I started making cakes and taking them to my friends’ houses and one of my friend’s said you should start a business, so I did.”

In the middle of last year, Ms Mignone established Guilt Free Delights - specialising in organic gluten, dairy and sugar free cakes and sweets.

A little more than a year later, working out of a kitchen in her family’s house, she supplies more than 50 cakes and more than 500 “bliss balls” each week to 10 cafes and eateries around Adelaide, including Argo, Penny University, Entropy and Earth’s Kitchen.

“I went to cafes and asked if they were interested and the response was really good - as soon as they tasted my cakes every place I approached said yes,” she said.

“One of the most popular cakes is the Vegan Snickers - I use a lot of nuts and dates to sweeten things and coconut nectar too - I put a lot of super foods in my cakes as well.”

Given the rapid growth of her business, Ms Mignone is on the lookout for a commercial kitchen, and in the longer term plans to set up her own cafe.

“At night you don’t see many places where you can get healthy sweets so I think it would be really popular,” she said. “I think it’s really good timing with a lot more people being health conscious these days and I want to help other people in my situation and educate people that you can have healthy desserts.”
